Cherry Chocolate Mascarpone Parfait


1 can (398 mL) pitted Bing cherries, drained,
juice reserved
1 tbsp (15 mL) all purpose flour
1/4 cup (50 mL) orange liqueur
1 cup (250 mL) Tre Stelle Mascarpone
1/2 cup (125 mL) brown sugar
1/2 cup (125 mL) confectioners sugar
1/2 cup (125 mL) cocoa powder
2 tsp (10 mL) vanilla extract
2 cups (500 mL) whipping cream, whipped
1 package (375 mL) amaretti cookies, crumbled
to make 1 1/2 cups

In a small saucepan mix together reserved cherry juice, all purpose flour and orange liqueur; cook on medium/low heat
until mixture begins to thicken – approximately 5 - 7 minutes.

Remove from heat; allow to cool; add cherries and refrigerate.

In a medium bowl, combine Mascarpone, brown sugar and confectioners sugar; beat with an electric mixture on medium
speed until smooth and creamy.

Carefully add cocoa powder and vanilla; continue beating until combined.

Gently fold in whipped cream.

Spoon mixture into parfait cups alternating layers with Bing cherries and amaretti cookies.

Refrigerate until ready to serve.

Makes approximately 4 - 6 servings
